Did You Know?? Today is Pumpkin Day


Did you know that the 26th of October is Pumpkin Day? and with Halloween just around the corner, pumpkins are at their most popular time of the year!

Pumpkins are most known for their decorative function and halloween related treats, or maybe even for pumpkin soup but did you know that pumpkins are considered as SUPERFOOD.

Pumpkins come in different shapes and sizes and they are super nutritious as well as contain a lot of antioxidants. I did a post on Pumpkin quite some time ago which you can have a look at here.

There are may ways to incorporate pumpkin in your diet from soups to mash to risottos to gnocchi or even as a side dish! I am always looking for ways to incorporate pumpkin in my dish, I love its unique taste and texture. Some versions of pumpkin can even replace pasta, they can be extracted in the form of spaghetti!

I love baking pumpkin in the oven with a little crushed garlic and olive oil!  This is super simple and all you need are 3 ingredients:


– Pumpkin

– Olive Oil

– Garlic Cloves


I cut the pumpkin into thick slices, then I cut the slices into 1-2 inch triangles or pyramids. Drizzle with olive oil and crush a couple of garlic cloves on them. Put in the oven and bake for around 20minutes at a temperature of 120 degrees celcius or until soft.

    I would suggest you try it out, I love it! Its unique in terms of taste and texture but it tastes delicious in my opinion πŸ™‚ xx
